Vintage silk, a nipped waist and a lipstick chosen to suit the wine list: that is Bianka dressed for dinner. She stands 165 cm, curvy and softly poised, with long light brown hair that turns to sunlight at the ends and hazel eyes that warm up under candlelight. In her early twenties, she dresses with an older sensibility, the kind of elegance that looks borrowed from a better decade and fits as if it were cut for her. Warmth comes first; a slower, low-lit charm arrives later in the evening, usually around the second glass.
Attentive is the word that suits her best. Bianka remembers how you take your coffee and which story you started and never finished. Her English is fluent and relaxed, and her subjects are generous ones: Italian cooking, which she learned by watching rather than reading, vintage fashion, which she hunts in small shops the way other people hunt restaurant bookings, and wine, which she tastes seriously and discusses without a trace of snobbery. Hand her the wine list and her first question will be about the food, not the vintage.
Around a dinner table is where she shines. Ask for a West End recommendation and she names Bocca di Lupo on Archer Street, where regional plates come in small and large sizes and the marble counter faces the kitchen. She orders a spread of small ones to share, picks a glass from a region you have never visited, and turns the meal into a conversation rather than a performance. Coffee is taken standing at the bar, and then a cab back to your hotel before dessert has quite settled.
From her Knightsbridge home, Piccadilly Circus is twenty minutes away, and she likes a day of notice so the counter seats can be held. Dinner dates across the West End start with one message to booking.
An evening with Bianka
Her perfect booking begins before the restaurant. Bianka likes to meet in the hotel bar at seven for a single glass, white if the night is warm, something from Piedmont if it is not, and to hear about your day before she tells you anything about hers. Then a short walk across Soho, arm in arm if you like, to a table where the staff look pleased to see her.
Dinner is unhurried and shared. She will steer you towards one dish you would never have ordered and be right about it. Later, back at the hotel, she slips off her heels, reads the room service menu purely to critique the wine page, and settles into the kind of conversation that runs past midnight without anyone noticing.
Whatever the waiter describes with the most affection. That dish is never the one on the specials board, and it is almost always the best thing in the kitchen.
Not at all. I judge him by whether he asks my opinion. After that the bottle hardly matters.
Something with a history. A vintage dress feels like it has been to good dinners before and already knows how to behave.
